Sweet Potato and Lentil...Shepherdless Pie
This is so filling and warms your soul! Enough to make two hefty portions And a little filling leftover! Some of the flavours may seem strange but the passata sauce adds depth it doesnt taste like tomato.
I like to use soy sauce or tamari instead of salt when I can as it gives stews and bakes another layer or flavour as well as the seasoning needed.
Now the cinnamon just makes this pie so tasty and gives it a real shepherds pie aroma!! Delia smith makes her shepherds pie with thyme and cinnamon and since trying it myself Ive never gone back!! 🍂
Glug of Olive oil
One red onion finely chopped
Two celery sticks chopped
Two carrots peeled and diced
One turnip peeled and diced
One tin of green lentils
Handful of red lentils
1/2 teaspoon of Paprika cayenne cinnamon
Splash of soy sauce
Veg stock cube made into 1/2 pint of stock
1/2 jar of passata
Few sprigs of fresh thyme
Two sweet potatoes peeled and cubed
One leek thinly sliced
Salt and pepper
Grated Vegan cheese optional
Boil a pan of water and add the sweet potato and boil for twenty minutes or until soft.
Slowly fry the celery and onions in a large pan with olive oil until soft
Add the rest of the veggies and simmer until softening add the lentils stock and passata and all the herbs and spices!
Simmer until most of the liquid has evaporated and lentils are to the texture you like
Mash the potato with plenty of salt and pepper and mix in the sliced leeks and vegan cheese!
Bake in the oven til bubbly and golden brown delish!! 🍂
